My favourite biscuit of all time?

A yo-yo… or is it yoe-yoe? Some people call them melting moments. WHATEVER you call them it doesn’t change the fact that they are simply delicious.

Turns out that the reason they are soooo gorgeous is that they are made with custard powder.

And custard is very high on my ‘so good I eat it straight from the bottle’ list…

Here is the super simple recipe!

1 1/2 cups plain flour
1/4 cup custard powder
few drops vanilla essence
175g butter
1/4 cup icing sugar
50g butter, softened
1/2 cup icing sugar
2 tablespoons custard powder

Cream butter and icing sugar together until light and fluffy, then add vanilla.

Sift flour and custard powder together and then mix sifted ingredients into creamed mixture.

Roll teaspoons full of mixture into balls and place on greased tray.

Be sure to get the balls all the same size, that way your sandwiched cookies will be a perfect match.

Flatten each down lightly with fork.

Bake at 180C for 18 – 20 minutes.

Don’t start watching an episode of the big bang theory, get distracted and burn a batch. Just saying.

When cool sandwich together in two’s with an icing made from:

50g butter, softened
1/2 cup icing sugar
2 tablespoons custard powder

I coloured my icing a bright pink and rolled them in chocolate hail for a slightly diva-ish twist.
